As most of you know, food has a huge impact on our bodies, health, and looks. Glowing skin, shiny hair, and strong nails are derived from healthy food choices. It is imperative to include fruits and vegetables into your diet and of course drink lots and lots of water. In simple terms, you are what you eat.
Now I know I am going on a rampage about eating healthy foods, but what about those times when you are craving something sweet?! Those times you are tempted to indulge in that gooey, chocolate brownie?? Well I am here to tell you that I may just have the solution you have all been waiting for. Today I am going to share one of my absolute favorite sweet-tooth recipes with all of you that is under 120 calories! Yes, I said UNDER 120 calories! :) This banana oat muffin recipe is not only DELICIOUS, but it is also low in fat! You really can't get much better than that! ;)
Ok so here's the breakdown:
Ingredients:
(Original recipe makes 12 muffins)
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup skim milk
- 1/3 cup applesauce
- 1/2 teaspoon vanilla extract
- 1 cup mashed bananas
Directions:
1. Combine flour, oats, sugar, baking powder, baking soda, and salt.
2. In a large bowl, beat the egg lightly. Stir in milk, applesauce, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
3. Bake at 400 degrees *F for 18 to 20 minutes.
